In our family, we all love coconut and chocolate coconut candy and desserts. And so when we came across a recipe for macaroon with a chocolate center, we knew we had to give it a try. That was a few years ago and Inside Out Mounds have been a part of our cookie tray every since. In fact, I think that it’s the cookie recipe we get asked for the most!

I can’t remember where we saw the original recipe, but it used a full sized Almond Hershey Kiss (and was called an Inside Out Almond Joy) and was a much bigger cookie than we make. Since we like all our cookies to be on the smaller side, we tweaked it a bit and swapped the full sized Hershey Kiss for Mini Kisses (in the baking aisle). The end result is a bite sized cookie that looks as good as it tastes!
