If you haven’t realized it by now, my family really loves lemon desserts. They are definitely our go to favorites for family dinners and parties, especially in the summer time. On my dad’s side of the family, no lemon dessert is better loved than lemon meringue pie.
Despite it being a family favorite, I’m ashamed to say, I’ve never attempted making a lemon meringue pie. The meringue piece intimidated me, and since it’s a pie you never know until you go to serve it if it’s turned out okay. After years of avoiding it, I finally decided to tackle it a few weeks ago. My dad was firing up his Big Green Egg to make some steaks and sausage for Sunday dinner and I volunteered to make dessert. Since my grandparents were also stopping by, it really seemed like the perfect opportunity.
Whenever I’m making something new, I like to spend some time checking out various recipes from magazines, chefs, and blogs that I trust. I was shocked to find how many different (and somewhat contradictory) ways there are to make a lemon meringue pie. After way too much time debating which method to go with, I finally decided to stick to a blog that has never led me wrong, Brown Eyed Baker. Her recipe is straight forward and fairly simple all things considered.
The pie turned out perfectly, even though I broke the rules a bit and made it the day before and stuck it in the refrigerator overnight! Now that my fear of lemon meringue pie has been conquered, I can’t wait to try out other variations and see which recipe truly is the best!
