Brickle Drop Cookies

Over the years, we have worked pretty hard to make sure we end up with a well-rounded cookie tray. Sometimes it’s hard to find interesting non-chocolate cookie recipes and so when we discovered the Brickle Drop Cookie recipe on the back of a package of Hershey’s Heath Toffee Bits we were excited to give it a try. It turned out to be a winner and it’s been on our cookie tray for over 5 years. While technically you could make this cookie with chocolate covered toffee bits, we stick with plain ones to give non-chocolate lovers a few more options (even if not liking chocolate is blasphemy!).

These cookies tend to spread a lot, and so even using a small cookie scoop you end up with a fairly big but thin and crisp cookie.
