I first made these Margarita Cupcakes three years ago for a Cinco de Mayo party I attended. I was amazed at how easy they were and how they really taste like a margarita. Since then, I’ve made them more than a few times in both full size and mini versions. I even sold a batch to a friend at work for a girls weekend in Atlantic City.
Unfortunately, I can’t take credit for this recipe. That honor goes to the Brown Eyed Baker which is my favorite baking blog (be sure to check it out!). I have however, made one minor tweak. Instead of using straight tequila, I use a mixture of tequila and triple sec. Before you get started baking, just mix 1/4 cup plus 1 1/2 teaspoons of high quality tequila with 4 1/2 teaspoons triple sec or orange liquor such as Grand Mariner or Cointreau. Anywhere the original recipe calls for tequila just substitute the margarita mixture.
If you’d prefer mini cupcakes instead of full size ones, just adjust the bake time to 8-12 minutes at 325F. The recipe should give you about 36 mini cupcakes. No matter what size cupcake you make, make sure to top with coarse salt right before serving otherwise your cupcake will sweat. Hope you all enjoy these cupcakes as much as I do!
